Confident Levelled Recipe - Safely works with unpasteurized Ingredients such as eggs and flour!

These sugar cookies are so delicious & easy to make!

INGREDIENTS:

  • 1 cup butter, at room temperature

  • 1 cup sugar

  • 2 eggs, at room temperature

  • 1 & 1/2 teaspoon vanilla extract

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 3 cups flour

PROCESS:

  • Preheat your oven to 350° F and be sure to have the rack in the middle of the oven!
    *I have the best result baking one tray at a time!*

  • Add and mix the butter and sugar until light and fluffy. This could take you about 1-2 minutes.

  • Mix in the eggs and vanilla extract until homogeneous.

  • Finally, add the baking powder, salt and flour. Only mix until all well integrated.

To Bake:

  • Prepare your baking sheets with parchment paper and begin scooping your cookies!
    *I love making big, thick cookies - so I use the 3 Tablespoon sized scoop!*

  • Scoop a maximum of 6 cookies per baking sheet, all evenly spaced out.

  • Flatten the cookies with a flat surface to about 1 cm in thickness.

  • Bake for 8-10 minutes, - or better yet, to 180F of an internal temperature!
    *To measure the internal temperature, you would require a food thermometer!
    In my option, it has been one of my greatest baking investments!*
    *To know if they are done, the cookies should NOT look wet/raw in the middle.
    They should be uniform at the top and no longer glossy*

  • Cool on baking sheets for at least 20 minutes to allow them to finish setting.

    Notes:

  • If you use a 3 Tablespoon cookie scoop, you will get about 16 cookies (depending on the flavor variation!)

  • If you use a 1 & 1/2 Tablespoon cookie scoop, you will get about 32 cookies (depending on the flavor variation!). Also note that the baking TIME will decrease to about 8 - 10 minutes! Internal temperature to check for is still 180F! The time it'll take to achieve said internal temperature will be quicker! So test it out!

FROSTING FLAVOR VARIATIONS:

  • Have your heart full of delicious wonder by adding a delicious frosting on the top of the cookie to change it's flavor! The frosting base I would use is an American Buttercream:

    FROSTING INGREDIENTS:
    - 1/2 cup butter, room temperature
    - 1 teaspoon of extract
    - Pinch of salt
    - 3 cups powdered sugar
    - 1-3 tablespoons whipping cream
    + Other optional toppings! - Make sure they are finely blended to be able to be spread or piped easily onto the cookies!!

    FROSTING PROCESS:
    - Cream/Mix the butter until light and fluffy, about 2-3 minutes at least. Mix in your extract and salt.
    - Slowly add the powdered sugar, 1 cup at a time, and beat until smooth.
    - Add 1 tablespoon at a time of milk until frosting reaches your desired consistency.
    + Add your additional flavor options at the end!

  • *Optional: Example of Other Flavors*
    - Cookies & Cream : Extract of choice- vanilla, add very finely crushed cookies in your frosting along with some melted white chocolate.
    - Churro: Extract of choice - vanilla, add 1-2 tablespoons of cinnamon to the frosting. Dip the frosted cookie into 1/2 cup of granulated sugar mixed with 1 teaspoon of cinnamon for an additional crunch!
    - Chocolate: Extract of choice - vanilla, add 1-2 tablespoons of cocoa to the frosting. For a "wow" factor, melt and drizzle chocolate over the frosted cookies !!


    Décor:

  • A fun way to decorate anything really, is to add color with gel food coloring, drizzle, dried/chopped toppings, or sprinkles to the frosting - if desired of course!
